Mary Jo Shipley's Baked Caramel Corn

This is a great gift idea!!

3 quarts freshly popped popcorn
1/2 cup chopped pecans
1/2 cup butter
1 cup firmly packed brown sugar
1/4 cup light corn syrup (Karo)
1/4 tsp. salt
1/4 tsp. soda
1/2 tsp. vanilla extract

Combine popcorn and pecans in a lightly greased 15 x 10 1 jelly roll pan
Mix well. Set aside.
Melt butter on low heat in med. saucepan
Add brown sugar, corn syrup, and salt
Bring to a boil and boil for 5 min. without stirring
Remove from heat; stir in soda and vanilla
pour over popcorn mixture, stirring until evenly coated.
Bake at 300 degrees for 30 minutes
Stir after 15 min.
Cool completely and break into pieces.
Store in airtight containers.
